Ingredients

4
pasta (penne or spaghetti)400 g
canned crushed tomatoes800 g
garlic cloves3 pcs
olive oil30 ml
fresh basil leaves10 pcs
salt5 g
black pepper2 g
water2000 ml

Steps

1

Boil the pasta in salted water according to package directions. While pasta cooks, prepare the tomato sauce in the GastroLab.

10 min💡 Boil pasta in a separate pot on the stovetop; the GastroLab will prepare the sauce simultaneously.
2

Add olive oil and minced garlic to the GastroLab bowl. Select Manual mode, set temperature to 60°C and speed to 1, and heat for 1 minute to soften garlic without browning.

GastroLab:Install stirring attachment. Add 30 ml olive oil and 3 minced garlic cloves to the empty bowl. On touchscreen: select Manual → set Temperature 60°C, Speed 1, Time 1 min → press knob to start. After 1 minute, press knob to pause.
1 min💡 Keep garlic on low heat to preserve flavor.
3

Add crushed tomatoes and salt. Heat at 95°C with speed 1 for 12 minutes to develop flavor while maintaining the stirring attachment.

GastroLab:Add 800 g crushed tomatoes and 5 g salt to the bowl. On touchscreen: select Manual → set Temperature 95°C, Speed 1, Time 12 min → press knob to start.
12 min💡 The sauce will simmer gently and reduce slightly, concentrating the tomato flavor.
4

Drain cooked pasta and transfer to a serving bowl or directly to plates.

2 min💡 Reserve 1 cup of pasta water to add to sauce if needed for consistency.
5

Remove the stirring attachment from the GastroLab and pour the tomato sauce over the drained pasta. Season with black pepper and fresh torn basil.

GastroLab:Hold knob for 3 seconds to stop the program. Remove the stirring attachment. Carefully pour the hot sauce over the pasta.
2 min💡 Add reserved pasta water a tablespoon at a time if sauce is too thick. Fresh basil added at the end keeps its bright flavor.
Chef's note: Serve immediately with grated Parmesan cheese and extra basil. A drizzle of quality olive oil adds richness. Pairs well with a crisp white wine or a light red.
