Ingredients
4
Chicken thighs, boneless skinless800 g
Onion1 pcs
Garlic cloves4 pcs
Fresh thyme sprigs4 pcs
Fresh rosemary sprigs2 pcs
Bay leaf1 pcs
Dry white wine250 ml
Chicken stock400 ml
Dijon mustard1 tbsp
Olive oil2 tbsp
Sea salt1 tsp
Black pepper0.5 tsp
Steps
1
Prepare chicken pieces and season with salt and pepper.
⏱ 5 min💡 Cut pieces evenly (4–5 cm) for uniform cooking.
2
Add olive oil, chicken pieces, onion, and garlic to the bowl.
GastroLab:
Install stirring attachment. On touchscreen: select Manual → set 100°C, Speed 8, Time 3 min → press knob to start. This quick sear will brown the chicken slightly.⏱ 3 min💡 Browning adds depth of flavor; don't skip this step.
3
Add white wine, chicken stock, mustard, thyme, rosemary, and bay leaf. Braise until chicken is tender.
GastroLab:
Keep stirring attachment installed. On touchscreen: select Manual → set 95°C, Speed 1, Time 57 min → press knob to start. The low speed and gentle heat will simmer the chicken until fork-tender without overcooking.⏱ 57 min💡 Gentle simmering (95°C, Speed 1) ensures moist, tender chicken. Do not exceed 95°C or use a higher speed; the meat will toughen.
4
Remove from heat, taste, and adjust seasoning.
GastroLab:
Hold knob for 3 seconds to stop the program. Remove the bowl carefully (hot). Stir with a spoon and taste. Add extra salt, pepper, or fresh herbs as desired.⏱ 5 min💡 Remove herb sprigs before serving if preferred, or leave them for aroma and authenticity.
Chef's note: Serve in shallow bowls with the braising liquid, accompanied by crusty bread, rice, or steamed potatoes. A crisp Sauvignon Blanc or light Pinot Noir pairs beautifully. The aromatics of thyme and rosemary can be enhanced by crushing a sprig gently over each plate just before serving.
