Pause the device (press knob once). Add minced garlic, white wine, and broth to the bowl. On touchscreen: select Manual → set Temperature 95°C, Speed 2, Time 10 min → press knob to start.While the sauce finishes, bring a large pot of salted water to a boil and cook pasta according to package directions (usually 10–12 minutes) until al dente. Drain and set aside.
When the onion sauce is ready, remove the stirring attachment. Transfer cooked pasta into the GastroLab bowl with the caramelized onion sauce. Use Manual mode, 70°C, Speed 1, for 2 minutes to gently combine and coat the pasta.
Remove stirring attachment. Add cooked pasta to the onion sauce in the bowl. Install lid. On touchscreen: select Manual → set Temperature 70°C, Speed 1, Time 2 min → press knob to start.Transfer pasta to serving plates or bowls. Top with grated Parmesan cheese and fresh parsley if desired.
