vegetable stock800 ml
heavy cream150 ml
butter30 g
fresh thyme2 sprigs
sea salt1 tsp
black pepper0.5 tsp

Steps

1

Chop mushrooms, onion, and garlic into roughly equal pieces.

โฑ 5 min๐Ÿ’ก Aim for roughly 2-3 cm pieces so they cook evenly.
2

Load the chopped mushrooms, onion, garlic, butter, and thyme into the bowl.

GastroLab:Install the knife. On touchscreen: select Chop โ†’ press knob to start.
โฑ 3 min๐Ÿ’ก The Chop mode will quickly break down the vegetables into a fine consistency for faster cooking.
3

Pour in the vegetable stock. Switch to Manual mode for simmering.

GastroLab:Remove the knife. Install the stirring attachment. On touchscreen: select Manual โ†’ set Temperature 90ยฐC, Speed 2, Time 12 min โ†’ press knob to start.
โฑ 12 min๐Ÿ’ก The stirring attachment prevents sticking and ensures even heat distribution without splashing.
4

Blend the soup smooth using the knife at high speed.

GastroLab:Stop the device. Remove the stirring attachment and install the knife. On touchscreen: select Chop โ†’ press knob to start (let it run 2โ€“3 min until smooth).
โฑ 3 min๐Ÿ’ก For a chunkier soup, run the Chop cycle for only 1โ€“2 minutes. For ultra-smooth, extend to 3 minutes.
5

Gently fold in the cold cream and season to taste.

GastroLab:Stop the device. Remove the knife and reinstall the stirring attachment. Pour in the cold cream. On touchscreen: select Manual โ†’ set Temperature 60ยฐC, Speed 1, Time 2 min โ†’ press knob to start.
โฑ 2 min๐Ÿ’ก Using Speed 1 with the stirring attachment ensures the cold cream blends evenly into the hot soup without splashing or breaking the emulsion.
6

Taste and adjust salt and pepper as needed.

โฑ 2 min๐Ÿ’ก Taste a small spoon of soup before serving. Add salt and pepper incrementally to avoid over-seasoning.
Chef's note: Serve hot in warmed bowls. Garnish with fresh thyme, a drizzle of truffle oil, or crispy croutons. Pairs beautifully with warm crusty bread.
