Steps
1
Chop mushrooms, onion, and garlic into roughly equal pieces.

GastroLab:
Remove the knife. Install the stirring attachment. On touchscreen: select Manual โ set Temperature 90ยฐC, Speed 2, Time 12 min โ press knob to start.โฑ 12 min๐ก The stirring attachment prevents sticking and ensures even heat distribution without splashing.

GastroLab:
Stop the device. Remove the knife and reinstall the stirring attachment. Pour in the cold cream. On touchscreen: select Manual โ set Temperature 60ยฐC, Speed 1, Time 2 min โ press knob to start.โฑ 2 min๐ก Using Speed 1 with the stirring attachment ensures the cold cream blends evenly into the hot soup without splashing or breaking the emulsion.
6
Taste and adjust salt and pepper as needed.
โฑ 2 min๐ก Taste a small spoon of soup before serving. Add salt and pepper incrementally to avoid over-seasoning.
Chef's note: Serve hot in warmed bowls. Garnish with fresh thyme, a drizzle of truffle oil, or crispy croutons. Pairs beautifully with warm crusty bread.
