Measure water (800 ml) into the GastroLab bowl. Add salt.
Install stirring attachment. On touchscreen: select Manual โ set 98ยฐC, Speed 1, Time 20 min โ press knob to start.Once water is simmering, carefully add the raw chicken cubes (3-4 cm pieces) through the top opening. Do NOT remove the lid.
Pause the knob. Lift lid edge slightly, drop in chicken cubes, replace lid immediately. Press knob to resume.When the GastroLab timer beeps, hold the knob for 3 seconds to stop. Let cool for 2 minutes, then carefully drain the chicken using a colander or slotted spoon. Discard cooking water.
Hold knob 3 seconds to cancel. Remove bowl when safe to handle.Place cooled chicken in a large bowl. Shred or cut into bite-sized pieces if desired.
In a small bowl, whisk together olive oil, lemon juice, minced garlic, and black pepper to make the dressing.
Arrange salad greens on plates. Top with shredded chicken, cherry tomato halves, and diced cucumber. Drizzle with dressing.
