Install knife. On touchscreen: select Chop → press knob to start. Chop for 1 minute until onion and garlic are finely broken down.Add the 500 g ground beef to the bowl with the onion and garlic.
Add ground beef to bowl (knife still installed). On touchscreen: select Manual → set 95°C, Speed 8, Time 8 min → press knob to start.When the meat is cooking (around minute 5), add chili powder, cumin, paprika, salt, and pepper. Stir in the water.
While the Manual step is running, wait approximately 5 minutes, then pause by pressing the knob once. Carefully add spices and water through the lid opening, then resume by pressing the knob again.When the Manual step completes (8 min total), remove the knife and let the mixture cool slightly. Transfer cooked beef to a serving bowl.
Press knob to stop when timer ends. Open bowl, carefully remove knife (place in sink), and transfer beef mixture to a serving dish.Warm the tortillas in a skillet or microwave (outside the GastroLab).
Assemble tacos: place warm tortilla, add seasoned beef, top with lettuce, tomato, cheese, and sour cream if desired.
