A light, airy chocolate mousse made with whipped cream and melted chocolate. Rich, decadent, and ready in under 30 minutes.

Dark chocolate150 g
Heavy cream300 ml
Sugar30 g
Egg yolks2 pcs
Vanilla extract5 ml

Steps

Place chopped dark chocolate in the GastroLab bowl.

Heat chocolate until melted and smooth.

GastroLab:Install stirring attachment. On touchscreen: select Manual → set 55°C, Speed 1, Time 3 min → press knob to start. Stir gently until chocolate is fully melted.
3 min💡 Low heat prevents chocolate from seizing. Stir occasionally.

Remove bowl from GastroLab and let chocolate cool to room temperature (about 5 minutes).

Add egg yolks, sugar, and vanilla extract to the cooled chocolate.

Whip the cold heavy cream with the butterfly whisk until stiff peaks form.

GastroLab:Install butterfly whisk. Add cold cream to a clean bowl. On touchscreen: select Food Processor → Speed 3, Time 5 min → press knob to start. Watch carefully; stop when stiff peaks form (usually 3–4 minutes).

Fold whipped cream gently into the chocolate mixture by hand using a spatula.

Divide mousse into serving glasses and chill in the refrigerator for at least 10 minutes before serving.
