vegetarian
Ingredients
4
Dark chocolate150 g
Heavy cream300 ml
Sugar30 g
Egg yolks2 pcs
Vanilla extract5 ml
Sea salt1 pinch
Steps
1
Place chopped dark chocolate in the GastroLab bowl.
⏱ 2 min💡 Chop chocolate into pieces no larger than 1 cm for even melting.
2
Heat chocolate until melted and smooth.
GastroLab:
Install stirring attachment. On touchscreen: select Manual → set 55°C, Speed 1, Time 3 min → press knob to start. Stir gently until chocolate is fully melted.⏱ 3 min💡 Low heat prevents chocolate from seizing. Stir occasionally.
3
Remove bowl from GastroLab and let chocolate cool to room temperature (about 5 minutes).
⏱ 5 min💡 Cooling prevents scrambling the egg yolks.
4
Add egg yolks, sugar, and vanilla extract to the cooled chocolate.
⏱ 1 min💡 Stir by hand until well combined.
5
Whip the cold heavy cream with the butterfly whisk until stiff peaks form.
GastroLab:
Install butterfly whisk. Add cold cream to a clean bowl. On touchscreen: select Food Processor → Speed 3, Time 5 min → press knob to start. Watch carefully; stop when stiff peaks form (usually 3–4 minutes).⏱ 4 min💡 Do not overbeat or the cream will turn to butter. Stop early and check consistency.
6
Fold whipped cream gently into the chocolate mixture by hand using a spatula.
⏱ 2 min💡 Use a rubber spatula and fold gently from bottom to top to keep the mousse airy. Do not use the GastroLab for this step.
7
Divide mousse into serving glasses and chill in the refrigerator for at least 10 minutes before serving.
⏱ 10 min💡 Can be made up to 4 hours in advance.
Chef's note: Serve chilled, topped with fresh berries, a sprinkle of cocoa powder, or a drizzle of chocolate sauce. Pairs beautifully with espresso or a dessert wine.
